Xanthan Gum
Xanthan gum is a natural plant gum with the extraordinary ability to absorb water. Thus it can be used in combination with flours that do not have binding properties. It can also be used as a thickener in fluids or pastes. Use as much as is required to give the desired result, ranging from 0.5ml to stabilise a whipped egg white to 10ml to create elastic biscuit dough.
Use in baking, shakes, homemade mayonnaise, soups, puddings, in fact anything that needs thickening.
