    Organic Japanese Umami Paste

    Clearspring’s Organic Japanese Umami Paste with Chilli is a paste which can be added to numerous dishes to enhance their overall Umami flavour. Think of it as a natural flavouring, which will enhance the taste of any dish.

    Traditionally made by adding a Koji culture to rice and leaving it to naturally ferment, the Umami is then mixed with soya sauce and chilli to create this incredibly moreish and versatile condiment.

    What is Koji culture?

    Koji is cooked rice and/or soya beans that have been inoculated with a fermentation culture, Aspergillus oryzae. Koji, spores are mixed into steamed rice (wheat and soybeans are also used, depending on the purpose), then allowed to mature for a period of time in a warm environment, about 50 degrees Celsius. The koji turns the starch in the rice into sugar (a process called saccharification) and releases a variety of fatty acids and amino acids including glutamate, the basis of umami. Koji is the secret behind most Japanese cooking and is used to make soya sauce, miso, mirin and sake. It has been designated as the National Fungus of Japan due to its importance in Japanese food culture.

    Made with just three ingredients:

    1. Premium quality whole organic soya beans which are specially contract grown for Clearspring. By law this means that the soya beans have to be sustainably cultivated, grown without the use of artificial fertilizers, herbicides and pesticides and cannot be Genetically Modified. Organic certification also means that the tofu production process does not permit commonly used processing aids such as defoamers, bleaches or preservatives.
    2. Nigari, a naturally occurring mineral rich coagulant derived from sea water. The base of nigari is magnesium chloride which makes tofu a good source of both magnesium and chloride.
    3. Fresh water.

    Coconut oil is rich in saturated fatty acids, especially lauric acid (about 50%) and myristic acid (about 20%). These fatty acids are so-called ‘medium-chain triglycerides’ (MCTs) because they are shorter molecules than the saturated fats commonly found in vegetable oils and animal fats (e.g. palmitic and stearic acid). This also explains why coconut oil has a far better health profile than its high content of saturated fats would suggest.

    Suggested use:

    Ideal for frying. Can be used as a natural substitute for margarine or butter. Solid at room temperature.
