Jaggery

Jaggery is an unrefined whole sugar where the molasses from sugar cane juice are not separated from the crystals. It is rich in vital mineral salts (28g/kg compared to 300mg/kg for refined sugar) including magnesium, potassium, iron, manganese and selenium. Organic Jaggery is processed the natural way, without the use of chemicals. Unlike many refined sugars, no bone charcoal is used for refining, so it is suitable for vegans.
